I am also scratch building a Patrol. I started in March, and am now forming ribs. I am having a great time and hope you enjoy as much as I. If you search "the router method" I think you find some good information to get you started.
I used 3/4" MDF and feel as though it was a good decision. I think most others here also used it. I have never seen 1" thick MDF, but one could bond a 2 sheets of 1/2" MDF together.

I made my form blocks out of 1 inch. A 4x8 sheet goes for something like $50. You have to go to a store that sells cabinet material. Call a local woodcrafter store and ask them where to go.
I do not know how or why, but mdf does shrink and expand.
I also think my 1 inch material had cleaner shavings as compared with 3/4 material. I think it is denser.
I will be scratch building and the itch is upon me. Can't wait to start cutting and forming. I am a native southerner living in NY.
I am originally from Virginia!!! I now live in Seattle. So what do they call a southerner that moves to NY? Did you do it out of your own free will?
Welcome to the scratch build club. I am also building a patrol from scratch or at least the wings. I have formed all the ribs and spars. I have also just about finished one wing. I have been delayed about 6-8 months with a move from Denver to Seattle area. Just got a 50'x50' hanger and the crated wing and parts will arrive tomorrow. Once I get the shop setup again the build will continue. Should finish somewhere between 2-10 years!!!!
Have you built any other planes before?
