Aileron and flap hinge covers

I have seen people cover their aileron and hinge flap points with a sheet of aluminum and I'm wondering how to best secure those. Nut plates or metal screws?

I am getting ready to cover my flaps and wondering if this is something to do before covering.

Our current plane uses very small metal screws into the aluminum. If I was going to install some in a plane now, I would use soft aluminum blind rivets, and just drill them out if I ever needed access.
